After de-stemming, fermentation occurs in small French barriques. During fermentation the wine undergoes several manual punchdowns of the caps, 3-4 per day – this is done to obtain a maximum extraction of color and sweet tannins. After fermentation the wine is placed in small French barriques for aging. Fermentation temperature:26-28°C.Aging
Aged in Tonneaux (500 Lit.) for 10 months and bottle aged for an additional 4 months before release.Tasting Notes
The color is intense ruby red. It exhibits intense aromas of wild berries, herbs, and bell peppers. The palate is full bodied with soft sweet tannins and balanced structure. A perfect wine to pair with roasted meats, aged cheeses and rich pasta dishes. Serve this wine at 17-18°C.
