American Red Snapper
With a fine textured, mild white meat, red snapper is perfect for almost any finfish recipe and will delight your gastronomic senses. Whether baked, broiled, grilled or fried, this mild-flavored fish always delivers a gratifying culinary experience and is also a very healthy food source. It can be served broiled, baked, steamed, poached, fried or grilled. Red snapper responds well to most cooking methods. Red snapper is excellent for grilling. Lemon, butter and fresh chili peppers are great ways to season this fish, complimenting its delicate flavor particularly well.
A highly-prized game fish, wahoo are known for their speed, beauty and difficulty to catch. Perhaps their most famous attribute is their table quality. Wahoo are among the most delicious of fish. Their meat is mild and white with a distinctive texture and flavor, and a large, firm flake. Wahoo are delicious grilled, blackened, smoked or broiled. Often compared to albacore tuna in flavor, wahoo is best cooked to medium or medium well to avoid drying out the flesh. Tropical flavors, such as fruits, chiles, and cilantro compliment the mild flavor of wahoo very well.
Sushi/Sashimi Grade Yellowfin Tuna
Yellowfin tuna is a tender, versatile fish with a mild flavor, which makes it great for eating seared or raw. It is widely used in raw fish dishes and is a prized species for the sushi/sashimi market. Petty's specializes in steaks cut from the loins of larger fish, which are known for their superior flavor and ability to stay moist during a variety of cooking methods. It is important to not overcook your tuna; this fantastic fish is best served medium-rare to raw.
Mahi-mahi is an exceptional tasting fish, with a firm, white flesh and a sweet flavor. It is less "fishy" tasting that many other fish, and is most prized by people in the US, Japan, and the Caribbean. There are an abundance of mahi-mahi recipes, and this fish is paricularly well-suited to any recipe calling for a white fish. Mahi-mahi is especially delicious in ceviche and fish tacos, and does very well when lightly seasoned and paired with lime or lemon juice, grilled, sauteed, fried, or broiled.
With a robust, creamy flavor, and tender flakiness, Scottish salmon is perfectly suited for any salmon recipe, and is, of course, wonderful when smoked with your favorite wood. Salmon can be cooked in a variety of ways, including smoking, grilling, baking, and broiling, and with the exception of smoking, should be served medium-rare to medium-well, to preserve the tenderness, moistness, and flavor of the flesh. Florida Stone Crab Claws
It's stone crab season again, and you won't want to miss out! Florida stone crab claws have a wonderful, sweet, delicate and subtle flavor, and are often considered among the very best variety of crabs available. These crabs are a fully renewable resource, due to the harvesting of only the claws, which grow back within a year or so. This harvesting process does not harm the crabs, and has even been proven to be beneficial to them. At Petty's, we purchase only the very best, freshest crab claws available, guaranteeing you'll be proud to serve them with a traditional mustard or butter sauce, or in your favorite recipes.
Dry Pack Scallops
The highest quality scallops available, our U10-U12 (10-12 per pound) size dry pack scallops are "unsoaked" and completely free of phosphate additives or preservatives. Discerning chefs know that there is no substitute for dry pack scallops, in both texture and taste. Additionally, without a phosphhate soak, these scallops have no additional water weight, which prevents them from shrinking during the cooking process, and ensures that you get what you pay for. There is simply no substitute for your favorite scallop recipe.
